The bay, and the quiet that comes with it
Vinogradišće is one bay on Palmižana, on the island of Sveti Klement in the Pakleni Islands, off Hvar. Pine runs down to the stone, the water is clear to the bottom, and the day is shaped by the boats more than the clock.
There are no cars on the island. What reaches you is the maestral that comes up around noon, the bonaca at first light, and not a great deal else. It takes most guests a day or two to stop reaching for the phone.
You will not meet the other parties. That is not an oversight; it is the point of keeping one bay this way.
Four houses, each with its own pool
There are four residences above the water: Infinity, Cloud, Eternity and Horizon. Each takes a single party at a time, and each has its own pool facing the bay, so the view from the water is yours and no one else's.
Infinity sleeps up to six, four adults and two children; Cloud, Eternity and Horizon sleep two each. Taken together the four houses hold around sixteen guests, which is the whole cove when you want it.
Whole-estate use, all four houses at once, is arranged on request. Either way, the count stays small, and the bay stays quiet.
Getting here, by water
The nearest airport is Split, about ninety minutes away by road and catamaran to Hvar town. From the town it is a ten-minute crossing by boat to the bay, and we arrange that last stretch with you.
Many guests arrive under their own sail. ACI Marina Palmižana is a few minutes' walk through the pine, so a yacht can lie close while you stay ashore.
However you come, the journey ends on the water rather than a road, which sets the tone for the rest of the stay.
Dinner on the same bay
The Zori restaurant has stood on this bay since 1947. There is no printed menu. Chef Siniša Jevrosimov writes the card each morning from the boats that come in, so the day decides what dinner is.
Most guests spend between €70 and €110 a head à la carte; the tasting menu starts at €120. Lunch runs from noon to three, dinner from half past six until late.
You walk to it from the houses. Nothing about the evening asks you to hurry back.
When to come, and the sea
The season runs from May through October. Either end is gentler and quieter; the middle is warm and long, with the light staying well into the evening.
The sea is near twenty-three degrees in June, twenty-six in August and twenty-four in September, which keeps the morning swim worth getting up for through most of the season.
