Zori is a small estate on Vinogradišće bay, on the island of Sveti Klement in the Pakleni Islands off Hvar. There are four houses here, and you take one to yourselves. Each is a private villa with its own pool and a terrace that looks down through the pine to the water. Getting here is part of the slowing down: about ninety minutes from Split airport by road and catamaran to Hvar town, then ten minutes by boat across the channel. No cars run on the island. There has been a restaurant on this bay since 1947. The season runs May through October. Most people arrive carrying the week they have just left, and lose it somewhere on the crossing.

Yes. Each of the four houses has its own pool and a private terrace above the bay. You take one house to yourselves, so the pool is yours alone for the stay.

The bay, and the quiet that comes with it
Vinogradišće is a small bay on Sveti Klement, the largest of the Pakleni Islands off Hvar. The houses sit above the water, with pine running down to the waterline and dry stone underfoot. The maestral comes up around noon and goes again by evening.
No cars run on the island. Nothing here moves faster than a footstep or a boat, and after a day or two you stop measuring the hours the old way. You will not meet the other parties. That is not an oversight; it is rather the point.
From your terrace the channel opens out to the far islands. Most of the day is spent watching the light change on the water, which is more occupation than it sounds.
Four houses, four pools
There are four residences above the bay: Infinity, Cloud, Eternity and Horizon. You take one to yourselves, so the pool is yours alone for the stay and you share neither a path nor a terrace with anyone outside your group.
Each house has its own pool and a private terrace that looks down through the pine to the sea. Infinity sleeps up to six; Cloud, Eternity and Horizon sleep two each. Taken together, the four hold up to sixteen.
Rates begin at €1,225 per night for a whole residence. The whole estate can be taken for exclusive use on request, which suits a party that would rather not divide the bay at all.

Getting here
The nearest airport is Split, about ninety minutes from Hvar town by road and catamaran. From Hvar it is a ten-minute boat across the channel to Palmižana, then a short walk up through the pine to the houses.
ACI Marina Palmižana is a few minutes' walk away, so those arriving by yacht can come to anchor and step ashore. We are ten minutes from Hvar by boat, and a good deal further by temperament.
The journey is part of the slowing down. Most people arrive still carrying the week they have just left, and lose it somewhere on the last crossing.
The restaurant on the bay
The Zori restaurant sits above the water, a short walk from the houses, and has stood on Palmižana since 1947. There is no printed menu.
Chef Siniša Jevrosimov writes the card each day from what the morning boats bring in, so what you eat depends on what the sea gave up that morning. Most guests spend between €70 and €110 a head à la carte; a tasting menu runs from €120. Lunch is served from noon, dinner from half past six.
You can walk down for an early swim, eat slowly, and walk back up. There is little reason to leave the bay, and most guests find they do not want to.

When to come, and the sea
The season runs from May through October. June is gentle and uncrowded; the long, still days of August are warmest; September keeps the warmth with fewer boats in the channel.

Come early or come late, as suits you. The light is best in the late afternoon, when the day softens and there is nothing in particular left to do.
